It is not possible to anonymize all bookings except those adjacent to a user's booking.
Here are the available options for anonymization of bookings:
(1) Anonymize past bookings
(2) Anonymize all bookings
(3) Anonymize booking for users who do not have access to the resource
(4) Anonymize bookings for users who are from a different organization
(5) Combination of option 3 and 4
